Ingredients
- 500g asparagus
- 1-2 cloves of garlic
- 500ml vegetable stock
- 1/2 white onion, diced.
- Olive oil
Method
- Chop the asparagus into quarters and fry in 1 tsp olive oil
- Once the asparagus is starting to soften add the garlic and onion
- Once the asparagus and onion have fully soften add 500ml of vegetable stock and simmer for another 2 minutes
- Place in a blender and blitz.
- Serve!
