Asparagus Soup

A light and tasty vegan soup ideal for lunch

Ingredients

  • 500g asparagus
  • 1-2 cloves of garlic
  • 500ml vegetable stock
  • 1/2 white onion, diced.
  • Olive oil

Method

  1. Chop the asparagus into quarters and fry in 1 tsp olive oil
  2. Once the asparagus is starting to soften add the garlic and onion
  3. Once the asparagus and onion have fully soften add 500ml of vegetable stock and simmer for another 2 minutes
  4. Place in a blender and blitz.
  5. Serve!
